Review of the scientific literature on gastronomic tourism in the post-pandemic scenario in World Heritage cities: Córdoba (Spain)

Local gastronomy has been consolidated as a claim for a large part of tourists who travel to a destination, so knowing the relationship between tourism and gastronomy has been a recurring theme for scientific literature in recent decades. One of the lines of research in this regard has focused on gastronomic tourism in cities declared a World Heritage Site by UNESCO. This research aims to know the state of the art specific to the city of Córdoba (Spain) since the Covid-19 pandemic, in order to detect what are the research trends and the knowledge gaps to which new contributions can be made. To do this, a review of scientific literature has been carried out in databases of recognized prestige, based on the case of the province of Córdoba from 2019 and until the time of the writing of the results of this research. Specifically, more than 20 articles have been analyzed whose study perspectives can be grouped into two blocks. The first block is about the gastronomic offer and the typical dishes of the area. The second block responds to tourist demand, through an analysis of the sociodemographic profile of gastronomic tourists, the motivations of this type of tourists and various characteristics of tourists. The main result of this research concludes that gastronomic tourism is one of the ways to consolidate the city of Córdoba as a tourist destination, as well as the need to promote this type of tourism
